Blackened Salmon Recipe
Serves 2
I recommend using an iron skillet to cook the salmon in. Get it really hot before putting the salmon on.
Ingredients:
- 2 Salmon Filets
- 2 Tablespoons olive oil
- juice of 1/2 lemon
- cajun seasoning or old bay
- ground pepper to taste
Directions:
Remove the skin from the salmon with a sharp knife. Preheat the oven to 300 degrees. Turn a burner on the stove to med-high to high. Cover the salmon with olive oil and then season with fresh ground pepper and cajun seasoning. Place the salmon on the hot skillet and sear on each side for about 1-2 mins or until seasonings begin to blacken. Finish off in the oven for about 10 mins or until done. Squeeze Lemon Juice over the salmon just before serving. Serve with vegetables or on top of a salad!
