Cucumber Yogurt Dressing
Serves 5-6
Use this delicious sauce as a marinade, dip, or dressing. This delicious Afghan inspired condiment is made by blending green chile pepper, mint, plain yogurt, and cucumber. The resulting color is perfect pastel green and it is a lovely dressing for my tomato and cucumber salad or as a dip for bread.
Ingredients:
- 2 cups plain low-fat yogurt
- 1/2 cup fresh mint leaves (chopped)
- 1/4 cup green chile pepper (chopped)
- 1 cup diced cucumber
Directions:
Place all ingredients in a food processor. Blend until liquified. The unused portion can be stored in a sealed container in the refrigerator for up to 3 days.
