Gorgonzola Sandwich Recipe

This easy recipe is great for lunch. The gorgonzola cheese gives this sandwich all the flavor it needs. Serve this dish with chips and a pickle.
I got the idea for this recipe from a bakery in Blacksburg, Virginia known as Our Daily Bread. These simple vegetarian sandwiches are made with spring mix (a selection of baby lettuces) and tomato placed between pieces of gorgonzola cheesy bread. A toaster oven works best to melt the cheese and toast the bread.
Ingredients
- 4 Slices Artisan Bread
- 2 Ounces gorgonzola cheese
- 4 Slices of tomato
- handful of spring mix
Directions:
Place bread on a baking pan. Top with gorgonzola cheese and bake in a toaster oven at 400 degrees for for 5 min's or until cheese is melted and bubbly.
Remove bread from toaster oven. Top one slice of gorgonzola bread with tomato and spring mix. Top with another piece of gorgonzola bread (cheese facing inward). Repeat with remaining ingredients.
