Mandarin Orange Salad Recipe
Serves: 1
This spring mix salad is topped with mandarin oranges, slivered almonds and creamy goat cheese then topped with raspberry vinergrette. Canned mandarin oranges are great tasting and are available year round making this salad easy and delicious.
Ingredients:
- 2 cups spring mix
- 1/4 cup canned mandarin oranges in light syrup
- 1 Tablespoon of slivered almonds
- 1 Ounce of Chevre goat cheese
- 2 Tablespoons Raspberry vinaigrette (I like Newman’s Own Light Raspberry Walnut)
Directions:
Drain the mandarin oranges but do not rinse them.
Place the spring mix in a bowl and top with the mandarin oranges and almonds. Crumble the goat cheese over top. Do not toss.
Finally, drizzle the salad with raspberry vinaigrette.
