Mexican Pierogies Recipe

Here I take my traditional pan fried pierogies recipe and turn it into something amazing. In this recipe I boil the pierogies, then cover them in chedder cheese and serve them with sour cream and salsa. This recipe makes a mexican fiesta complete!
Ingredients:
- 8 Pierogies
- 1 cup shredded chedder cheese
- Dash of Tabasco sauce
- Sea Salt to taste
- Freshly Ground pepper to taste
Serve with:
- Sour cream
- 1/2 cup mexican salsa
Directions
Preheat oven to Broil
Bring water to a boil in a medium pot. Preheat a large skillet to medium-high heat.
Add the pierogies to the boiling water. Boil them for 2-3 minutes or until they float. Drain them.
Place pierogies in an 8 X 8 in baking pan. Sprinkle the shredded chedder cheese over top the pierogies. Place in the oven and broil until the cheese in melted and bubbly.
Remove from the oven and serve with mexican salsa and sour cream.
